Seminar
On 9th December 2022, at The Independent Research Laboratory STANLAB LLC in Bielawy, near Nakło over the Noteć,
a seminar for producers of the meat sector was held. At the meeting, lectures were given by both employees of the Laboratory,
as well as invited guests: prof. Hanna Jankowiak from the Faculty of Animal Breeding and Biology,Bydgoszcz University of Science and Technology,
MaciejWysocki - breeder of Highland cattle, producer of the "Royal Beef" brand and BeataBakalarska - Head of the Department of Control of Articles of
Animal Origin from the Main Inspectorate of Agricultural and Food Quality.
The topics presented at the seminar were developed on the basis of participants' suggestions and concerned the following issues:
1. Meat, raw meat products, meat products - correct classificationNutri-Score.
2. Determination of the meat content of products based on the results of laboratory tests.
3. Qualitative assessment of pork.
4. Challenge test - determination of the potential growth ofListeria monocytogenes in food samples.
5. Histological methods in the evaluation of meat products.
6. Determination of compliance/non-compliance of test results/research findings. Decision-making principles applied rules when determining compliance/non-compliance.
7. “Royal Beef” as a response to the changing beef market in Poland.
8. Labeling of meat products.Evaluation of the labeling of meat products over the years 2016-2022.
In addition, seminar participants had the opportunity to taste cheese produced as part of the "Green Milk" project, and students from
Alfa Animalis - Student Science Club got acquainted with the work in the research laboratory for food quality assessment.
